Tuna & Red Onion Fried Doughnuts Recipe

A modern twist on the classic fried doughnut with seaweed, this version combines the savory flavors of tuna and sweet red onions. Crispy on the outside and soft on the inside, these fried delights are sure to be a hit!
Typical Recipe from: Calabria ( South Italy )
Ingredients (Makes about 20 pieces)
- 200 g type 00 flour
- 200 ml water
- 6 g dry yeast
- 1 pinch of salt
- 130 g tuna in olive oil (drained)
- 50 g Tropea red onion (roughly chopped)
- Oil for frying (as needed)
Method
- In a bowl, dissolve the dry yeast in slightly warm water. Gradually incorporate the flour, stirring to form a soft dough.
- Add a pinch of salt, the drained tuna, and the roughly chopped Tropea red onion. Mix until well combined.
- Cover the bowl with plastic wrap and let the dough rise in a warm, draft-free place for at least 1 hour.
- Heat oil in a deep pot until hot. Using a spoon, scoop and drop portions of dough into the oil.
- Fry the doughnuts for a few minutes, turning them to ensure they cook evenly on both sides.
- Once golden and crispy, remove the doughnuts and drain excess oil on paper towels.
- Serve the "paste cresciute" hot and enjoy this delicious combination of tuna and onion flavors.
