Soft Focaccia Recipe with Rosemary and Sea Salt

Indulge in the delightful flavors of this soft focaccia, perfectly seasoned with rosemary and sea salt. Ideal for snacks, picnics, or as a side dish, this easy-to-make bread is a crowd-pleaser!


Preparation Time: 50 minutes ( + 3 hours of rising time )
Portion for: 6 People

Ingredients:

  • Water: 300 ml
  • Yeast: 15 g ( or a bag of Paneangeli Mastro Fornaio )
  • Flour: 500 g ( Ideally Caputo Nuvola or Caputo Pizzeria Flour )
  • Salt: 10 g
  • Olive oil: 50 ml (plus extra for greasing and salamoia)
  • Rosemary: a few sprigs
  • Coarse salt flakes: to taste

Required Tools:

Use an oven pan of 26cm ( eventually you can use any pan size but you might need to increase the quantity of the ingredients for the same results )

Instructions:

  1. Dissolve yeast: Crumble the yeast into the water and mix until fully dissolved.
  2. Mix ingredients: In a stand mixer bowl, add flour. Pour in the yeast mixture and start mixing on low speed. Add salt and then olive oil gradually.
  3. Knead dough: Mix until the dough is smooth and homogeneous (about 10 minutes).
  4. First rise: Shape the dough into a ball, place it in an oiled bowl, cover with plastic wrap, and let it rise at room temperature for 2 hours.
  5. Prepare baking pan: Oil a 26 cm diameter, 5 cm high baking pan. Spread the dough evenly in the pan.
  6. Second rise: Cover with plastic wrap and let it rise for 1 hour in a turned-off oven with the light on.
  7. Prepare salamoia: Mix water and olive oil.
  8. Create dimples: Press the dough with your fingertips to create dimples, then pour the salamoia over the top and sprinkle with coarse salt flakes and rosemary.
  9. Bake: Preheat the oven to 200°C (fan-forced) and bake for 40 minutes.

Serve: Let the focaccia cool slightly, then remove from the pan and serve warm.

Ideally cut the foccaccia in half and filled it with ham or mortadella, adding some slice of mozzarella cheese and other fresh ingredients as you like
