- 800 g potato gnocchi
- 300 g sausage
- 150 g stracchino cheese
- 2 tablespoons milk
- Extra virgin olive oil

Step 1: Prepare the Sausage
- Remove the sausage from its casing and crumble it into small pieces.
- Heat 2-3 tablespoons of extra virgin olive oil in a pan over medium-high heat.
- Add the crumbled sausage to the pan and cook for about 10 minutes, stirring occasionally, until browned and cooked through.
Step 2: Incorporate the Stracchino
- Reduce the heat to low and add the stracchino cheese and milk to the pan with the sausage.
- Stir continuously until the cheese has completely melted and formed a creamy sauce.
Step 3: Cook the Gnocchi
- Meanwhile, bring a large pot of lightly salted water to a boil.
- Add the potato gnocchi to the boiling water.
- Once the gnocchi float to the surface (after about 2 minutes), use a slotted spoon to transfer them directly into the pan with the sausage and stracchino sauce.
